Ingredients:

  • 1-2 inch piece of Fresh Ginger in thin slices
  • 6 cups Chicken bone broth
  • 4 Green onions sliced into medium sized pieces.
  • 1-2 garlic cloves peeled and chopped
  • Mushrooms- optional

Instructions:

In a pot, mix the garlic cloves, onions, ginger slices, and mushrooms, and pour a bit of broth. Simmer until the ingredients soften, and then add the rest of the broth. Bring the mixture to boil, and lower the heat. Cook for 20-30 more minutes and your ginger-garlic soup is ready!

You can add some other vegetables to the soup as well, to enrich its taste and boost its effects. You can add 4-5 pieces of astragalus to strengthen the immune system and improve your qi energy, or dried or fresh mushrooms, such as maitake or shitake.

You can keep it in the fridge for up to 3-4 days.

Organic Chicken Bone Broth

You can either purchase organic chicken bones at the local butcher or save some from a roast. Then, you should simmer them for 24 hrs with a tablespoon of apple cider vinegar, and enough water to fill the pot and cover them.

Then, skim the oil and fat from the surface, strain, and pour it into glass jars or freeze it.

If you are a vegetarian, you can save the ends of the vegetables in a bag in the freezer and use them in your stock. Then, simmer them for 8-10 hours, and to boost the nutritional content of your vegetable broth, add mushrooms, miso, or seaweeds.
